I go medium. There should be some pink on the inside. In fact, I don't mind if it's more medium rare. I find further on the rare side to be a bit much for me though.

Actually, you could take a blowtorch, sear and crunchify the fat around the edges of the steak, then make a quick pass or two over the meat on both sides and plate that bad boy.

I'm a shameless carnivore and there's not much in the world that tastes better than crunchified beef fat. Unless it's maybe pork fat.

MmmMmMMmMMMMMmmmmmmm....
